Our Frozen Pivot Story
When the COVID pandemic restricted how restaurants do busines, we quickly prototyped our first frozen pizza using the same team, techniques, wood-fired ovens, and specialty ingredients we use for our in-house pizzas.
Thanks to your love of these pizzas, great refinement of the product, and hard work, we have award-winning frozen pizzas and a new business that saved us from closing our brick-and-mortar restaurants, but, most importantly, saved 100+ jobs.
We’ve learned some powerful lessons—mostly perseverance and the incredibly positive effect a strong team and community can have on our business.
Katie’s Frozen Headquarters
Spiegelglass Construction and Edward Don built our new facility equipped with two of the largest size wood-fired ovens from Earthstone and the largest boos block table you’ve ever seen, custom made by John Boos Co. This space was built specifically to cater to our hand-made frozen pizza process.
